Breakfast quesadillas are such a easy simple way to begin your day. I don’t know about any of you but breakfast is my most favorite meal of the day. Now though there are many times when I skip out on breakfasts, actually I wouldn’t say skip out I usually have breakfast much later on in the day, I am always looking for new ways to jazz up our breakfast selections.
The real beauty to this recipes is that it calls for no time at all. Scrambling of the eggs takes about 5 minutes. Sauteing chopped sausage and green pepper takes about 3 minutes and combining all of those into a grilled quesadilla takes about another 5 minutes. So it takes 15 minutes or less to make a delicious filling breakfast!
To me that sounds pretty doable and definitely well worth 15 minutes of my time… even if I do feel like I am scrambling in the mornings, it’s so worth it!
So let’s stop gabbing and start making something yummy for breakfast…
Start cooking your chopped sausage and green peppers…
Then add your egg to your mix and scramble all together…
Now comes the fun part combining it all into one quesadilla… YUMMY!
Breakfast Quesadillas
Scrambled eggs, shredded cheese, sausage and green peppers make for a quick and easy breakfast your family will love.

- Yield: 2-4 servings 1x
Ingredients
- 4 (10inch) Flour Tortillas
- 4 large Eggs, scrambled
- 2 tablespoons Milk
- 2 tablespoons Butter, divided
- 1/2 cup Sausage, diced
- 1/4 cup Green Bell Pepper, chopped
- 1 cup Colby Jack Cheese, shredded
- Salt/ Black Pepper
Toppings (optional):
- Salsa
- Sour Cream
- Hot Sauce
- Guacamole
Instructions
For the scrambled eggs:
- Chop sausage and green bell peppers. Heat a non-stick skillet and melt butter. Then saute chopped sausage and green peppers.
- Whiles the sausage and peppers are cooking, in a medium bowl, combine the eggs, salt, pepper and milk. Using a whisk, whip the eggs by hand until they are combined. Add the eggs to the sausage and scramble on low-medium heat.
For the quesadilla:
- Divide egg mixture between two tortillas, layering the egg mixture on top, then the cheese. Top each tortilla with one of the remaining tortillas.
- In a skillet, melt the remaining butter over medium heat. Add one quesadilla at a time to the pan, cooking until golden brown (about 3-4 minutes per side), then flip and cook on the other side. Repeat with remaining quesadilla.
- Remove from pan, and cut in triangles. Serve with toppings of choice.
