These buckeyes (peanut butter balls) are such a classic no-bake festive dessert recipe, dipped in dark or white chocolate, then coated with sprinkles.
1 cup Peanut butter, creamy
1 1/2 cup Powdered Sugar
4 Tablespoons Unsalted Butter, room temperature
1 teaspoon Vanilla Extract
1 1/2 cups Semi-Sweet Chocolate (I used Dark Chocolate)
Holiday Colored Sprinkles
In a medium bowl add peanut butter, powdered sugar, butter and vanilla extract. Mix until all is incorporated and you cannot see the powdered sugar anymore.
Shape the dough into tablespoon sized balls and place on a sheet pan, lined with parchment paper.
Refrigerate the buckeye balls for at least 30 minutes.
Microwave the chocolate in 30 second intervals or until melted. Stir until smooth and thoroughly combined.
Remove the buckeye balls from the fridge. Use a toothpick to pick up each ball and and dip into the melted chocolate. (Optional), roll the ball in sprinkles if using. Repeat with each ball. Dampen your finger slightly, to smooth over the top of each ball to remove the mark from the toothpick.
Refrigerate for 30 minutes or until set.
