What can I say I LOVE Mexican food. My family and I eat a lot of Mexican food especially Chicken Fajitas. They are so easy to make and they are perfect with my Refried beans and Yellow rice. This recipe is made with such an easy fajita spice mix it takes no time to make any day of the week. I love the fact that you can season this the night before or make the day of. Especially when you add caramelized onions, bright colored peppers and fabulous add-ins. Just warm up your tortillas in the microwave or oven, add shredded cheddar cheese lots of lettuce and tomatoes and spicy salsa and pico de gallo… YUMMY!!!!!
Chicken Fajitas
Ingredients
serves 6
1 1/2 lbs. boneless skinless chicken breasts, cut into thin strips
1/4 green bell pepper, cut into thin strips
1/4 red bell pepper, cut into thin strips
1 medium onion, thinly sliced strips
8 flour tortillas, warmed in the microwave
For serving: (optional)
Shredded lettuce
Shredded cheddar cheese
Salsa
Pico de gallo
Sour cream
Guacamole
Directions
In a large resealable plastic bag, combine 2 tablespoons oil, lemon juice and seasonings; add the chicken. Seal and turn to coat; refrigerate for 1-4 hours.
In a large skillet, heat 1 tablespoon of oil and saute peppers and onions in remaining until crisp-tender. Remove and keep warm.
Discard marinade. In the same skillet, cook chicken over medium-high heat for 5-6 minutes or until no longer pink. Return pepper mixture to pan; heat through.
Transfer the chicken and vegetables to a large bowl and serve with the warmed tortillas, lettuce, cheese, salsa, sour cream and lime wedges.
