These shrimp kabobs are so fresh and yummy and just burst in your mouth with flavor, they were the perfect treat when I was on my kabob kick the other day. I just marinated these shrimp in a simple flavorful sauce made up of chipotle powder, fresh cilantro, brown sugar, lime, cumin, garlic and paprika. They were so tasty the perfect ending to our summer.
So fire up the grill and let’s start having some fun!

In a medium size bowl mix the chipotle powder, paprika, cumin, brown sugar, lime zest, lime juice, garlic and cilantro in a bowl.
Marinate for at least 20 minutes.
Skewer the shrimp, I chose to add bell peppers.
Spray your grill the and then add the shrimp. Cook until cooked shrimp are pink in color or opaque, about 2-3 minutes per side.

Chipotle Lime Shrimp Kabobs
Ingredients:
- 1 lb. Shrimp, peeled and de-veined
- 3 tablespoons fresh Cilantro, chopped
- 2 cloves of Garlic, minced
- 1 tablespoon Olive Oil
- 1 tablespoon Brown Sugar, I used light brown sugar
- 1 teaspoon Cumin, ground
- 1 teaspoon Paprika
- 1/2 teaspoon Chipotle Powder
- 1 Lime, juice and zest
Directions:
Make sure to soak your bamboo skewers for at least 20 minutes or more in water before skewering your shrimp.
