Cilantro Lime Rice

Cilantro-lime rice is the perfect side dish for any meal especially any Mexican meal.

Ingredients

  • 1 teaspoon vegetable oil or butter
  • 2 teaspoon fresh cilantro, chopped
  • 2 cups white basmati rice
  • 4 cups water
  • 1 teaspoon salt
  • 1 freshly squeezed lime juice

Instructions

  1. In a small heavy pot, add rice, water, 1/2 tsp oil + salt. Boil on high uncovered for 12 minutes.
  2. Fluff rice with a fork. Stir in cilantro and lime juice. Add additional salt to taste. Serve hot or at room temperature.
