Cinnamon Roll Coffee Cake

Summer is almost finished and the family and I just got back from an awesome week on the Disney Cruise Fantasy, more to come on that in the next few weeks… It’s truly amazing how being at sea for 7 days it takes a while to get used to being back on land… 🙂  But I’m back and ready to start cooking and baking and making a mess in my kitchen, so to speak. You already know my love affair with cinnamon rolls, sticky buns, and all things pretty much cinnamony (yes, I know that is not a word)… I mean I have made cinnamon roll pull apart muffins, cinnamon roll sugar cake bars, even made cinnamon roll cake.  I’m pretty sure the list could go on but I don’t wanna bore you.

Back to the topic on hand this coffee cake that is filled with a layer of actual cinnamon rolls.  Yep, you heard correctly… I took a can of cinnamon rolls and squished them down as my bottom layer and then made an easy coffee cake mix. How simple is that, pretty simple… why not try it yourself!

Here is the layer of our cinnamon rolls dough from the can…

Stir together sugar, oil, egg and milk in a large bowl. Add baking powder, salt, and 1 1/2 cups flour, and stir until no lumps remain. Set aside. Pour the coffee cake mixture over the cinnamon roll crust. In a small bowl, add the brown sugar, cinnamon, and 2 tablespoons of flour to the melted butter.

Sprinkle over the top of the coffee cake.

With a knife swirl the cinnamon mix around.

Bake and enjoy!

Cinnamon Roll Coffee Cake

Coffee cake made with a cinnamon roll dough as its crust.

  • Yield: 6-8 servings 1x

Ingredients

Scale
  • 3/4 cup Granulated Sugar
  • 1/4 cup Vegetable Oil
  • 1 Egg
  • 1/2 cup Milk
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 1 1/2 cups All-Purpose Flour + 2 tablespoons, divided
  • 1 can (8 count) Cinnamon Rolls, with icing
  • 1/2 cup Brown Sugar
  • 2 teaspoons Cinnamon
  • 2 tablespoons Butter, melted

Instructions

  1. Preheat oven to 350 degrees. Spray a round pan with cooking spray, you can use a pie plate if you would like.
  2. Stir together sugar, oil, egg and milk in a large bowl. Add baking powder, salt, and 1 1/2 cups flour, and stir until no lumps remain. Set aside.
  3. Open can of cinnamon rolls and separate. One at a time, press the cinnamon roll between the palms of your hands to flatten. Press each into the bottom and up the sides of the pie plate to form the crust, pinching to seal any gaps between the rolls.
  4. Pour the coffee cake mixture over the cinnamon roll crust.
  5. In a small bowl, add the brown sugar, cinnamon, and 2 tablespoons of flour to the melted butter. Stir and sprinkle over the top of the coffee cake.
  6. Bake for about 20-30 minutes, until a toothpick comes out just shy of clean. (I would go with less than 30 minutes because I wanted my cinnamon roll cake to still be somewhat soft inside) While warm, top with icing that came with the cinnamon rolls.
  7. Serve warm.
