Banana Bread:
1 cup of granulated sugar
1 stick of Butter, softened (room temperature)
1 large Egg, room temperature
3 ripe Bananas, mashed
2 cups of All-Purpose Flour
1 teaspoon Baking Soda
2 teaspoons Baking Powder
1 teaspoon Cinnamon
1/4 teaspoon Nutmeg
dash of Salt
1/2 cup of Milk
2 teaspoons Vanilla extract
Cinnamon -Sugar Swirl:
1/3 cup Granulated Sugar
1 Tablespoon cinnamon
Instructions
Preheat oven to 350. Butter and four a loaf pan. In a large mixing bowl beat 1 stick of butter and 1 cup of granulated sugar. Add 1 large egg. Mash three ripened bananas, then add them to the sugar and butter mixture.
Next, add 2 cups of all-purpose flour, the baking soda, baking powder, cinnamon, nutmeg, and salt. Mix all of these ingredients together. Add the 1/2 cup of milk and 2 teaspoons of vanilla extract.
In a small dish, mix together the 1/3 cup sugar and 1 Tablespoon cinnamon.
Add 1/2 of the batter to the loaf pan and then sprinkle half, or a little more than half of the cinnamon-sugar mixture all over the batter in the pan. Add the rest of the batter, and then sprinkle the leftover cinnamon-sugar on top.
Bake for 1 hour or until cooked through. Make sure to watch carefully so the top does not burn.
