I have to admit, I have never really been a big fan of salmon. Don’t get me wrong I love fish especially if its red snapper or sea bass. Mmmmm Mmmmm those are fabulous. Now my parents they are a completely different story, they just LOVE salmon. Me on the other hand not so much…
I make it every now and again, but I really have to feel for it to eat it. This past grocery shopping trip, it called to me for some strange reason, salmon that is. I had been thinking of different ways to cook it and I decided to try a Honey-Soy glazed recipe. Let’s just say that after I made this recipe, I was hooked and I think it just maybe my favorite salmon recipe to date!

Honey-Soy Glazed Salmon
Ingredients
- 1 scallion, minced
- 2 tablespoons reduced-sodium soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 teaspoon minced fresh garlic
- salt/black pepper
- 1 pound center-cut salmon fillet, skinned, cut into 4 portions
Directions
Whisk scallion, soy sauce, vinegar, honey and garlic in a medium bowl until the honey is dissolved.
Wash, pat dry, and remove back skin from salmon fillets.
**How to skin a salmon fillet**
Place salmon fillet on a clean cutting board, skin-side down. Starting at the tail end, slip the blade of a long knife between the fish flesh and the skin, holding down firmly with your other hand. Gently push the blade along at a 30 degree angle, separating the fillet from the skin without cutting through either.
First season salmon with salt and black pepper. Then place salmon fillets in a sealable plastic bag or container, add 3 tablespoons of the sauce and refrigerate; let marinate for 15 minutes or overnight. Reserve the remaining sauce.
Transfer the salmon to a lined small baking pan with foil and coat with cooking spray or if your like me you forgot to line your baking pan and just sprayed it with cooking spray… either way will work. 🙂
Broil the salmon until cooked through, 6 to 10 minutes.
Drizzle with the reserved sauce and garnish.
