Reese’s Peanut Butter Chocolate Cheesecake Bars

Decadent, rich peanut butter cheesecake bars that’s filled with chopped Reese’s peanut butter cups and topped with chopped peanut butter cups and drizzled with chocolate.

  • 20 OREO® cookies
  • 5 Tablespoon butter, melted {I use salted}
  • 16 oz. {2 blocks} cream cheese, softened
  • 1 large Egg
  • 1/4 cup Imperial Light Brown Sugar
  • 1/4 cup smooth Peanut Butter
  • 2 teaspoon Vanilla Extract
  • 12 mini size Reese’s Peanut Butter Cups, chopped
  • 1/2 cup Semi-Sweet Chocolate Chips

Instructions

  1. Preheat oven to 350ºF. Line an 8×8 inch baking pan with aluminum foil, allowing the sides to overhang.
  2. In a food processor, pulse the OREO® cookies until fine crumbs are formed. Add the butter and mix with the OREO® cookies. Press into the bottom of your prepared pan and bake for 9-10 minutes. Let cool completely.
  3. In a large mixing bowl, beat together the cream cheese, egg, Imperial Light Brown Sugar, peanut butter and vanilla until smooth.
  4. Fold in the chopped Reese’s and spread batter over prepared crust. Bake for 30-35 minutes or until cheesecake is set. Once the cheesecake is completely cooled, place cheesecake in refrigerator to chill for an hour.
  5. Melt the chocolate chips in a bowl or piping bag. Microwave on High for 30 seconds and then mix/stir. Continue to heat in microwave in 15 second increments until completely melted. Drizzle the chocolate over the cheesecake bars.
  6. Place the bars back in the refrigerator and cool completely for at least 3 hours. Once cool, lift foil out of the pan and cut into squares… Enjoy!
