2 tablespoons Olive Oil
1lb Conch Meat, chopped
1lb Shrimp, chopped
1/2lb Scallops
2 teaspoons of garlic, chopped
½ – 1 ½ cups of onions, diced
1/2 cup Celery, diced
3 tablespoons Tomato Paste
1 quart Chicken Broth
2 teaspoons Thyme, fresh
1 teaspoon Oregano, fresh
1/2 cup Carrots, diced
2 cups of Clam Juice
1– 1/2 cup Potatoes, diced
1 – ½ cups Tomatoes, diced
Salt and Pepper to taste
Place the oil in a pot and heat until very hot. Add the conch meat, shrimp and scallops and sear for 1 to 2 minutes.
