Buying Chinese food for dinner is such a common thing and is pretty much done by families worldwide. It’s so easy to just call your favorite nearby Chinese restaurant and order delivery when you are trying to get kids home after school, homework finished, and dinner on the table before 8:00 at night. I know that one of our favorite things to get are stir fried noodles. Mmmm Mmmm noodles…. so yummy!
I think some people feel that cooking true Chinese recipes takes so much time but truly its one of the easiest fastest things to cook. Making these noodles is not only fast and delicious but such a great way to save money. The best part of making these noodles is not only that it takes 30 minutes or less to make but that it also uses either fresh or frozen veggies… and you can add rotisserie chicken from the night before.
Make the stir fried sauce. In a small pot combine stock, soy sauce, lime juice, oyster sauce, and red chili sauce and minced garlic. Bring to a boil and let simmer on medium heat. While that is simmering in a small bowl combine cornstarch and water. Then add the cornstarch mixture to the pot and allow the sauce to thicken. After a few minutes once sauce is thickened remove from heat.
In a medium pot bring 4 cups of water to a high boil and cook your noodles according to box directions.
In a medium wok heat add vegetable oil. Then add your veggies that you will be stir frying.
Once the noodles are al dente add them to the wok.
Next add the stir-fried sauce. Mix it all together until fully combined.
Enjoy!

1 cup of fresh veggies or frozen veggies (your choice)
4 tablespoon vegetable oil
Stir-fried sauce:
2/3 cup vegetable stock (or chicken stock, which was what I used)
4 tablespoon soy sauce
2 teaspoon oyster sauce
2 teaspoon lime juice
8 garlic cloves, minced
2 teaspoon granulated sugar
2 teaspoon corn starch
6 tablespoon water
2 teaspoon red chili sauce
Directions
Make the stir fried sauce. In a small pot combine stock, soy sauce, lime juice, oyster sauce, and red chili sauce and minced garlic. Bring to a boil and let simmer on medium heat. While that is simmering in a small bowl combine cornstarch and water. Then add the cornstarch mixture to the pot and allow the sauce to thicken. After a few minutes once sauce is thickened remove from heat.
In a medium pot bring 4 cups of water to a high boil and cook your noodles according to box directions. If you are using fresh veggies cut them to your desired size. If you are using frozen veggies take a cup out to thaw while you are gathering the rest of your ingredients.
In a medium wok heat add vegetable oil. Then add your veggies that you will be stir frying. Once the noodles are al dente add them to the wok. Next add the stir-fried sauce. Mix it all together until fully combined.
