Yellow Rice with Sausage

This yellow rice dish is packed with lots of flavor and delicious sliced Andouille sausages.

Ingredients

For Yellow Rice:

  • 2 cups Long-Grain Rice
  • 3 cups Chicken Stock
  • 2 cloves Garlic, minced
  • 1/4 cup Green Pepper, chopped
  • 1 bay leaf
  • 1 packet Yellow Food Coloring, (I used Vigo)
  • 1/2 teaspoon Smoked Paprika
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper

For Sausage Mixture:

  • 1 tablespoon Extra-Virgin olive oil
  • 1 tablespoon Butter
  • 1 clove Garlic, minced
  • 1/2 Onion, chopped
  • 1 can Diced Tomatoes, drained
  • 1 package Split Rope Sausages, Andouille Sausage, cut in 1/2 inch slices diagonally
  • Salt and black pepper to taste

Instructions

For Yellow Rice:

  1. In a medium pot combine all rice ingredients and bring to a boil on high heat. Once it is boiling lower the heat to a simmer and cover for 15-20 minutes or until rice is completely cooked.

For Sausage Mixture:

  1. While the rice is cooking in a large sauté pan add olive oil and butter and heat on medium heat. Once that is melted and heated add the garlic and onions. Sauté for 5 minutes or until onions become translucent.
  2. Next, drain and then add the can of tomatoes. Cook for another 5 minutes. Add salt and black pepper. White that is cooking chop up the split ope sausages in 1/2 inch slices diagonally.
  3. Cook for 12 minutes. Once the rice is finished cooking add the yellow rice to the sausage mixture and cook together for another 5-10 minutes just to combine all the flavors. Add more salt and black pepper if you choose.
