Brown Butter Chocolate Chip Cookie Bars

Brown Butter Chocolate Chip Cookie Bars is a mouthful but a sensational mouthful especially when your mouth is filled with these thick, chewy, gooey rich cookie bars.

Sweet & salty is the combo you get when making these outrageously delicious brown butter chocolate chip cookie bars. Homemade chocolate chip cookies – -in bar form- – made with browned butter, vanilla, brown sugar and plenty of milk and dark chocolate.

Making brown butter can seem a little intimidating but it really is so simple and easy to make. It tastes so amazing and adds such a richness to your cookie dough that it may become your favorite from here on out. I know that I may have a brown butter obsession now.

But for those of my foodies who feel that they don’t know where to start with making brown butter, let’s begin with what brown butter is and how to make it.

WHAT IS BROWN BUTTER?

Brown butter is basically when you melt down butter and allow it to brown in color which will produce a rich bold nutty flavor when added to baked goods and dishes. It is a simple process that consists of cooking down sticks of butter slowly and whisking in the process.

HOW TO MAKE BROWN BUTTER

  • Place your butter in a skillet, or saucepan over medium heat.
  • Allow the butter to melt completely, stirring.
  • Once the butter has melted, it will start bubble, foam and deepen in color. Make sure you continue to stir.
  • After the butter has completely melted, continue to cook on medium heat until the color turns to an amber color and starts to smell nutty.
  • When brown bits begin to show up at the bottom, remove from heat add to a shallow heatproof bowl. Make sure you add all the browned bits at the bottom of pan to bowl, that adds flavor and you don’t want to miss any of it.
  • Set aside and allow to cool a little before adding to ingredients.

Now let’s start baking…

Add all those glorious milk and dark chocolate chips to the batter.

Now do you see all of those browned butter bits… so pretty!

Make sure to press down batter in a greased baking dish we prepared at the beginning. Brush some of the melted brown butter in the pan… I know glorious.

Bake at 350 degrees F for 25-30 minutes. You just want to make sure you DO NOT overbake.

Remove from oven and sprinkle sea salt on top.

Ingredients

1 cup butter, unsalted

1 1/2 cups light brown sugar, loosely packed

2 large eggs, lightly beaten

1 tablespoon vanilla extract

2 cups all-purpose flour

½ teaspoon baking soda

½ teaspoon salt

1 cup milk chocolate chips

1 cup dark chocolate chips

sea salt, for topping (optional)

Instructions

Preheat the oven to 350 degrees F. 

In a small bowl, whisk together the flour, baking soda and salt. Set aside.

On medium heat, place a non stick skillet and add butter to melt.  Cook and allow the butter to melt down and bubble, stirring occasionally, until brown bits begin to appear on the bottom. Once the brown bits appear, turn the heat off and continue to stir for about 30 seconds. MAKE SURE to let the butter cool slightly. With a pastry brush, dip in melted browned butter and butter the bottom and sides of a 9×13 inch baking dish.

In a large mixing bowl, add brown sugar, then pour in the brown butter and mix until combined combined and smooth – the sugar will somewhat dissolve.  One at a time, add the eggs, stirring immediately making sure they do not cook.  This is why we must make sure the browned butter is cooled before adding the eggs.  Next, stir in the vanilla extract.

Lastly, with a wooden spoon, stir in the dry ingredients until combined. Add in the chocolate chips and mix until thoroughly mixed through.

Now is time to press the mixture into the buttered dish.  Bake for 25 to 30 minutes, or until the top is golden brown and set in the center.  Remove the dish and immediately sprinkle the top with sea salt. Allow to cool completely before slicing into bars.
