Crock Pot Buffalo Chicken Dip

I’m always looking for a delicious quick appetizer recipe I can make for potlucks, barbecues, and holiday parties. I mean do you really need a n event to make an appetizer… I think not!

This creamy, tangy, cheesy dip is filled with shredded chicken, hot sauce, ranch dressing, cream cheese and lots of cheese. Plus the best part it’s all made in a crockpot. All you need once its cooked are tortilla chips, crackers or celery sticks and an appetite.

So let’s get down to what inside this delectable easy peasy crockpot buffalo chicken dip:

  • Cooked Chicken – I like to get a roast chicken from the grocery store or roast a chicken in the oven, which did you know you can cook a chicken in a crockpot also… that’s for a different day. With this chicken I just shred and pull apart with my fingers.
  • Ranch Dressing – you can substitute this dressing with bleu cheese and I am sure it will give you a tangier taste.
  • Cream Cheese – an 8 ounce block
  • Buffalo Wing Sauce – any wing sauce can be used but I always have a bottle of Franks Hot Sauce in the fridge for buffalo wings.
  • Shredded Cheddar Cheese

In a crock pot, combine all ingredients: shredded cooked chicken, chopped up cream cheese block, ranch dressing, buffalo sauce, and 1 cup of shredded cheese.  Stir it all together.

Place lid on top and cook on LOW heat for 3-4 hours or HIGH heat for 2 hours.  Make sure to stir every 30 minutes to make sure it is all melted together.

Once done, add the remainder of cheese (1/2 cup) on top and place lid back on to melt.

Sprinkle chopped green onion (scallion) on top and serve.

Enjoy with tortilla chips, vegetables or crackers!

4 cups cooked chicken, shredded

8 ounces Cream Cheese

1 cup Ranch Dressing

3/4 cup Buffalo Sauce

1 1/2 cups Cheddar Cheese, shredded

Toppings: chopped green onions

Instructions
