Honey Balsamic Lamb Chops

This recipe for lamb chops I think is definitely one of my favorite in my house.  It is so easy and quick that it will be ready in minutes, literally.  The chopped rosemary really gives the lamb chops a fresh flavor especially when sprinkled with salt and freshly ground black pepper, drizzled with olive oil…. you can’t beat that.  

I think because lamb chops, when cooked properly, can be so tender and succulent you won’t stop eating them, so make sure you DO NOT over cook them, we don’t want dried out lamb… YUCK!

The combination of honey, garlic, and balsamic vinegar creates such a sweet and tangy sauce that combined with the lamb is pretty incredible.  

(I think I’m making myself hungry… ohh ooooo!)

I don’t know if it is the sauce that just completes the grilling of the lamb but it really is DELICIOUS!!!

So start up your grill and lets start cookin!

 

Season the lamb chops with salt and pepper. Drizzle with the olive oil and sprinkle with rosemary.

 

Grill the lamb chops for 2 to 3 minutes each side until medium-rare.

 

In the bowl of a food processor, combine the balsamic vinegar, garlic, and honey. 

 

Pulse until blended. With the machine running, slowly pour in the vegetable oil until the mixture is smooth and forms a thick sauce.

 

Season with salt and pepper, to taste. 

 

Arrange the lamb chops on a platter.

Spoon the sauce over the top or serve the sauce on the side. 

Make enough because they go fast! 🙂

    *  1/3 cup balsamic vinegar

    * 1 garlic clove

    * 2 tablespoons honey

    * 3/4 cup vegetable or canola oil

    * Kosher salt and freshly ground black pepper

    * 8 small lamb chops

    * 2 tablespoons olive oil

    * 1/2 tablespoon chopped fresh rosemary leaves

Place a grill pan over medium-high heat or preheat a gas or charcoal grill.

In the bowl of a food processor, combine the balsamic vinegar, garlic, and honey. Pulse until blended. With the machine running, slowly pour in the vegetable oil until the mixture is smooth and forms a thick sauce. Season with salt and pepper, to taste.

Season the lamb chops with salt and pepper. Drizzle with the olive oil and sprinkle with rosemary. Grill the lamb chops for 2 to 3 minutes each side until medium-rare.

Arrange the lamb chops on a platter. Spoon the sauce over the top or serve the sauce on the side.
