Start off with…..
The ingredients needed are: all-purpose flour, cornmeal, vanilla extract, salt, sugar, baking powder, and water.
In a medium sized bowl combine 1 1/2 cups of all-purpose flour, 3 tablespoons of cornmeal, 1/2 teaspoon salt, 3 tablespoons sugar, and 1 teaspoon of baking powder. Whisk all of these ingredients together until combined.
In a small bowl combine a teaspoon of vanilla extract and a cup of water. Mix it together.
Add a small amount of water in to the mixture, work the water in to the mixture with your fingertips. Keep adding small amounts of water to the mixture to combine. As you are working the water into the mixture it should start to resemble breadcrumbs.
Keep adding water until the mixture becomes a firm dough which should only be slightly sticky. The whole cup of water should not be needed. If the mixture gets too sticky to work with, just add more flour.
Cover the mixture with saran wrap and let it stand for half an hour.
Divide the mixture in to eight portions. Knead each portion and roll it in to a small sausage shape.
In a small bowl combine a 1/4 cup of flour and 1/4 cup of cornmeal.
Roll each festival in the flour and cornmeal mixture made above and prepare to fry.
Deep fry until golden brown on medium to low heat. This should take about half an hour, just remember to watch them clocely so they do not burn.
Can you smell them…. Sooooooooo Good!

i tried but they went very dark very fast and tasted very much of cornflour! they were not light and fluffy 🙁 but i put the oil on very low so dont know why they went dark, what kind of oil should i use? vegetable, olive or sunflower?
I tried this same recipe by following the U-tube recipe on another site with same ingredients and method. I actually tried the recipe three times because 1 cup of water was too much. 1/2 cup is enough and frying time should not take more than 10 minutes. I am an experienced baker so I am used to using correct measuring cups and spoons. I did not enjoy these festivals and they were not fluffy although I rested the dough. I have moved on to another which tasted like the festivals that I am used too. Thanks though, maybe I only know ond type of taste and texture for festivals. I will have to try more when next I am Jamaica to know better.
For the person above, try using Canola oil. Vegetable oil is too heavy and creasy for these type of foods. Maybe Sunflower is O.K. Olive oil not for frying this type of bread.
Also you should use medium heat. The lower the heat the more oil will be absorded. Yummy might add more to this.

I just tried these today, and they were wonderful…a hit with the kids too. Now, I used a deep fryer, and they only took 8 minutes. We had them with jerk pork tenderlion. I saw another recipe somewhere else that called for evaporated milk and butter. I may try that one later, but this one was fabulous. I’m planning to make more tomorrow to have with our leftovers.

Am about to go try this recipe, how do you think it will work with whole grain flour?
well, i did try the recipe, i actually made them with all pupose flour but forgot to check if i had white sugar, which i did not, so i used brown sugar and it caused my dough to be too moist. ok so ill try again and this time make sure i have all the right ingredients. they taste good just broke apart while frying. ill tyr again. thanx for the recipe.
