Oreo stuffed Chocolate Chip Cookies

I mean let’s just take a second and think about it.. sometimes the weeks go by fast and then sometimes they just inch on by. This week has gone by pretty slow and I am excited for the weekend to be here, especially since May begins tomorrow and that means …

IT’S MY BIRTHDAY MONTH!!!!!!

So May is an especially busy month in this household because we have big things going on – – like Mother’s Day, My birthday, my daughter Kayla’s birthday, last day of school and my son Julian comes home from college! (If you have been following along you all know that Julian went away to school at Wake Forest University, check out the post)

Now I mean birthdays come and go of course but this year I am turning 40 and my daughter is turning 16. Those are big numbers and we have so many great things happening to celebrate all those big milestones so stay tuned.

So in honor of it being Friday and tomorrow being May 1st I wanted, actually no scratch that, I NEEDED to share this recipe of Oreo Stuffed Chocolate Chip Cookies.

I know I’m not the first person to ever bake stuffed chocolate chip cookies before but I knew I wanted to make my version of Oreo stuffed chocolate chip cookies and share it on my blog. I used the perfect chocolate chip cookie recipe that I love making and are a family favorite.

With that said, I believe WE deserve a cookie. I mean I know I do. A BIG. FAT. CHOCOLATE CHIP COOKIE. Stuffed with another favorite cookie inside. Oreo Stuffed Chocolate Chip Cookies is what I’m talking about!

So let’s start baking.

Here are a few tips for making Oreo stuffed Chocolate Chip Cookies

  • I like to use Double Stuff Oreos for the stuffing part but you use any kind you like.
  • You want to chill your dough after you make it and before you stuff them with Oreos. Chilling the dough for 15-30 minutes will allow the dough not to be so sticky and make it easier to manage.
  • Once you stuff the cookies you want to make sure you chill the dough again a 2nd time. This allows the cookies to not spread when baked. If you plan on baking them long after 30 minutes in the fridge, wrap them in plastic wrap and store in a Ziploc bag or airtight container. These cookies can also be placed in the freezer and baked at a later date.

How To Make Oreo stuffed Chocolate Chip Cookies

Pre-heat oven to 400 degrees.

Place butter into bowl and turn mixer on low. If using a stand mixer, use the paddle attachment.

Add sugars and beat butter for 1 minute or until smooth on medium speed.  You want to make sure all butter and sugars are incorporated.

Add the eggs and beat on medium just until incorporated with butter and sugars, about 30 seconds.

Next, add the cake flour, all purpose flour, baking powder, baking soda and salt.  Mix on low until the wet and dry ingredients are mixed together.

Now add all the chocolate chips into the batter and mix again a few times, until all mixed together.

Place cookie dough in fridge for 15-30 minutes to allow cookie dough to come together.

Remove cookie dough and start scooping your cookie dough by first placing one scooped dough on pan and add a Oreo cookie on top, then scoop another cookie dough and place on top.

Seal edges together by pressing and cupping in hand until Oreo Cookie is enclosed with cookie dough. Place onto a greased baking sheet  and place back in fridge for another 15 minutes.  *this will help the cookies to not spread when baked.* 

Remove  cookies from fridge and bake for 10-12 minutes or until cookies are baked to your liking.

You want the tops slightly golden and browned but still underdone.

**Do not over bake. Let cool for 15 minutes before serving.**

Enjoy with a tall glass of milk!

Ingredients

1 cup unsalted butter, softened

3/4 cup light brown sugar

1/2 cup granulated sugar

Notes

If you plan on baking these cookies long after 30 minutes in the fridge the 2nd time, wrap each cookie in plastic wrap and store in a Ziploc bag or airtight container. These cookies can also be placed in the freezer for 3 months and baked at a later date.
