Pumpkin Spice French Toast

Pumpkin is popping up everywhere.  I mean pie pumpkins are out in the stores along with big ‘ol massive pumpkins for decorating.  I guess the season is changing and fall is here.

Now even though it is still hot as sin — {exactly how hot is that to be precise??? I used to always wonder that when my mom would say that} — or how about hot like fire — you know you like that one. 🙂

Anyways it hasn’t cooled down yet in these parts but fall is around the corner and that means my favorite time of year — the time where pumpkins begin baking.  I can’t wait to fill my house with the smell of pumpkin recipes.

Pumpkin Spice French Toast

Sweet smelling pumpkin spice french toast is a great way to kick off Fall.

  • Prep Time: 10 minutes
  • Cook Time: 20 minutes
  • Total Time: 30 minutes
  • Yield: serves 6

Ingredients

Scale
  • ⅔ cup milk (I used Almond Milk)
  • 4 eggs
  • 2 Tablespoons sugar
  • ½ cup pure pumpkin puree
  • 1 teaspoon vanilla
  • 2 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice
  • ¼ teaspoon salt
  • 8 slices of bread, any kind is good as long as its a day or two old

Instructions

  1. Preheat a skillet or electric griddle to medium heat.
  2. In a large bowl, mix together the milk, eggs, sugar, pumpkin, spices, vanilla and salt. Mix well.
  3. Dip each slice of bread into egg mixture, coating each side. If you like your french toast firm, coat your bread quickly. If you like it more on the soggy side then let it sit for a few more seconds.
  4. Cook on skillet for about 4 minutes per side.
  5. Remove from griddle sprinkle cinnamon pumpkin sugar on top. Serve with butter, powdered sugar and/or syrup and enjoy!
