Happy Hump Day All!
It’s Day 2 of our 12 Days of Christmas Cookies. Today we share our Sugar Cookie Thumbprint Cookies but the star is the adding of sugar cookie Hershey kisses in the middle after being rolled in Christmas sprinkles. 🙂
These classic sugar cookies get a twist with a special surprise in the middle… Hershey Sugar Cookie Kisses.
Now let’s start with baking…
Preheat oven to 350 degrees and line a baking sheet with parchment paper (or coat with baking spray).
Remove all of the wrappers from kisses, and set aside.
In a large bowl with a standing mixer or hand mixer, cream the butter and sugar together until light and fluffy, about 1 minute.
Add in the egg and vanilla extract; beat until combined.
Add in flour, baking soda, baking powder, and salt. Mix until just combined, making sure to scrape down the sides of the bowl every now and again.
Shape the cookie dough into 1 inch balls.
Roll the balls in the Christmas sprinkles, and place them on a cookie sheet. Do not press them down.
Bake for 8 to 10 minutes, or until edges of the cookies are lightly browned. You want the cookies to look not baked through. This will keep them soft and chewy.
Remove the cookies from the oven and let cool for 3-4 minutes. After this time press a Hershey kiss in the middle of each cookie.
Let cool completely on a wire rack.
