Red Velvet Cake White Chocolate Chip Cookies

It’s Day 3 of our 12 Days of Christmas Cookies. Today we share our Red Velvet Cake White Chocolate Chip Cookies. Yes that is not an accident the word “cake” in the title.

Did you know that you could make cookies with a boxed cake mix. Yep, you sure can. This will make the cookies soft and have a similar cakelike texture but in cookie form. I know pretty genius… whoever came up with that idea.

Cookie making doesn’t have to take forever or consist of a ton of ingredients.  These 4 ingredient cookies are so delicious they will taste as if you slaved all day baking in the kitchen.

What makes these cookies even better is adding white chocolate chips in the batter. I love Ghirardelli so that’s what was used but you can use any kind of white chocolate chips or a white chocolate bar and cut it up in chunks. You can even use a Hershey bar or a cookies & cream Hershey bar… Ohhhhhhh that sounds yummy!

Red Velvet Cake White Chocolate Chip Cookies

Ingredients

10 tablespoons (2/3 cup) Unsalted Butter, melted

2 Large Eggs

1 18oz box Dunkin Hines Red Velvet Cake Mix

3/4 cup White Chocolate Chips, plus extra for topping

Instructions

In a large bowl beat together the melted butter, cake mix and eggs.

Stir in the white chocolate chips.  Place the mixed cookie dough in the refrigerator for 30-45 minutes or more, to cool and have the batter come together and not spread too thin during baking time.

Scoop the batter into balls (I like to use a cookie scoop, I used a 2 inch scooper, which yielded bigger cookies), and place 2 inches apart on a lined cookie sheet.

Place a few extra chocolate chips on the top of each cookie, then bake in the preheated oven at 350F for 8-10 minutes.  Just until the cookie edges are baked and top is somewhat baked but not soft.

Notes

  1. Do not prepare the cake mix as directed on the box.
  2. If your box of cake mix is 15oz, use 1/3 cup melted butter instead. Do not use oil instead of butter.
